SHOOK FARMS

Dan Shook raises beef and pork. His beef animals are raised on pasture and finished with grains he grows on his own property. He raises a mix of heritage breed hogs - Old Spot, Berkshire, Duroc, Red Wattle - which he lets roam in woodlots around his property. This allows them to display natural piggy behaviors like rooting for bugs and grubs.

Based in Lancaster PA, Lancaster farm fresh is a co-operative non profit that partners with over 100 small farms in the area. With many farms obtaining organic certification and the other growers using the highest standards possible. Working with Lancaster Farms is the inspiration behind our ever changing menu allowing the seasonal availability of produce to drive the menus each week

A New Challenge

2016

Chef Sakamoto implored chef Fukui to share her methods. She said that she would only teach him the basics if he promised to bring the art of ramen abroad. He brought the proposition to his family, and his mother immediately urged him to go to Hong Kong.


The next week, Chef Sakamoto flew to the “Pearl City” and discovered that he felt more at home than ever. He knew that he could meld the umami flavors and smoky scents of Cantonese cuisine with the richness and nuances of ramen. He went back to Tokyo to learn from Chef Fukui, and with her blessing, returned to Hong Kong seven years later.
